The basis for Michael Schwartz’s latest restaurant on board Royal Caribbean’s Anthem of the Seas lies right within its name. At Michael’s Genuine Pub, the James Beard Award-wining chef aims to showcase cuisine and spirits that are sincere, fresh, simple, and pure.
With the ship’s recent repositioning to Cape Liberty in Bayonne, New Jersey, food and beverage now have an American focus, with artisan products drawn from all over the country — a slight shift from those offered following its inaugural season in the United Kingdom last spring. Diners can find traditional pub fare, including fish and chips, bangers and mash, prime rib, roast beef, and a scotch egg. But the chef is most excited about the larger plates, like the grilled salmon with curried lentils, and the secret, off-menu crispy pig ears.
Michael’s Genuine Pub on Anthem of the Seas is the fourth at-sea restaurant for Schwartz, with two more coming this spring, a third farm-to-table 150 Central Park on Harmony of the Seas, and another pub on Ovation of the Seas. And, cruisers may see entirely new concepts from the chef in the future.
“I have lots of ideas,” says Schwartz. “Whenever I can get the food and beverage executive team or [Royal Caribbean Chairman and CEO] Mr. Fain … to get their ear. I’m always plugging away with some ideas. Really, the possibilities are endless.”
