Seabourn just announced that Seabourn Quest will get The Grill by Thomas Keller in May, replacing Restaurant 2. Seabourn Odyssey and Seabourn Sojourn will also be getting the restaurant while the ships go through dry dock later this year.

Inspired by the classic American chophouse, The Grill will serve iconic dishes that have been updated to feel more modern. Dishes include a Caesar salad and a well-crafted ice cream sundae, and dining in the space is complimentary. 

Designed by Adam Tihany, the 44-seat, dinner-only restaurant on Seabourn Quest will have a modern take on the traditionally dark and masculine steakhouse atmosphere with light-colored wood paneling, curved walls, and leather seats. When Seabourn Encore launches in December, the larger 94-seat restaurant will also have a bar and lounge, as well as an entrance space with a wine tasting area and bottles displayed in glass. 

Currently, dishes designed in partnership with California-based Keller— including appetizers, entrees, and desserts — are served every other night across the fleet. The poolside Patio Grill has a number of items, and family-style dishes are also served. 

Additionally, the line also announced today that mixologist Brian Van Flandern, originally of Keller’s Per Se restaurant in New York City, is currently rolling out ship-wide cocktail improvements, including upgraded barware and hand-selected boutique spirits, from whisky to mescal, that are produced in countries the ships calls on throughout the year. The new cocktails will continue to be a part of the complimentary cocktail menu. 

And the line had one other announcement today: As the ships go through dry dock, they will also get a new for-a-fee cabana-filled space on the pool deck called The Retreat, with Wi-Fi and a hot tub.
