Seabourn Cruise Line is putting the finishing touches on Seabourn Encore, set to make its first sailing on December 4 out of Athens. This will be the largest of Seabourn's ships, carrying 600 passengers — 150 more than the line's other vessels. And unlike the other ships, all 300 staterooms on Seabourn Encore will have private balconies.
The ship's additional square footage also includes new spaces for the line. Seabourn Encore will have the line's first dedicated sushi restaurant, with an à la carte menu including sushi and sashimi as well as maki rolls, salads, and caviar at dinner. Bento boxes will be available at lunchtime. The ship will also have an expanded version of The Grill — the Thomas Keller restaurant the line debuted on Seabourn Quest earlier this year — which includes a bar, lounge, and wine tasting room.
